Vanilla Tea Cupcakes
Well the biscuit recipe we put up a couple of weeks ago seems to have been pretty popular (and not just around the office when they came out of the oven) so it's time for a sequel
These cupcakes aren't the prettiest but they are super easy to make and super delicious.
You will need:
- 125g of butter softened
- 2 eggs
- 1 tspn vanilla essence
- ¾ cup skim milk
- 2 cups plain flour
- 1 cup caster sugar
- 1½ tspn baking powder
- Café Breakfast tea
- 1 packet white chocolate buttons
1. Heat the milk to almost boiling and use to brew 2 teaspoons of Cafe Breakfast tea for 10 minutes
2. In a large mixing bowl combine sugar, baking powder and sifted plain flour
3. Beat in the butter until combined
4. Add the vanilla essence and the eggs one at a time
5. Wrap the mixture in plastic wrap and refrigerate for an hour
6. Pour in the milk tea and mix through with an egg beater or an electric beater
7. Grease a mini muffin tray then three quarter fill with the mixture, on top of each cupcake place a chocolate button
8. Bake at 180° for 12 minutes or until just browned on top and cool on a wire rack.
If you are feeling really adventurous add a buttercream icing to the top but for me these are sweet enough already.
